Ingredients
  

  • 1 box white or vanilla cake mix
  • Ingredients listed on cake mix box (eggs, oil, water)
  • 1 teaspoon vanilla extract (optional)
  • 1 box instant pistachio or vanilla pudding mix (3.4 oz)
  • 2 cups cold milk
  • 1 teaspoon mint extract (optional)
  • Green food coloring (optional)
  • 1 container whipped topping (8 oz, Cool Whip or homemade)
  • Green sprinkles, shamrock decorations, or crushed pistachios (for garnish)

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking pan.
  • Prepare the white or vanilla cake mix according to package instructions, adding vanilla extract, green food coloring, and mint extract if desired. Mix thoroughly.
  • Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
  • While the cake cools, whisk together the instant pudding mix and cold milk in a medium bowl until smooth and thickened. Add green food coloring if needed.
  • Use the handle of a wooden spoon or a straw to poke holes evenly across the cooled cake, about 1 inch apart.
  • Pour the pudding mixture over the cake, spreading gently to ensure it fills the holes. Refrigerate for 30 minutes to allow the pudding to set.
  • Spread the whipped topping evenly over the chilled cake using a spatula.
  • Decorate the cake with green sprinkles, shamrock decorations, or crushed pistachios for a festive touch.
  • Refrigerate the cake for an additional hour before slicing and serving. Enjoy chilled!
