Ingredients
  

  • 2 cups cooked brown rice
  • 2 cups cooked shredded chicken breast
  • 1 cup low-fat Greek yogurt (or light sour cream)
  • 1 cup low-sodium chicken broth
  • 1 cup shredded reduced-fat cheddar cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup chopped broccoli (or any vegetable of choice)
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon red pepper flakes (optional)
  • 0.5 cup whole wheat breadcrumbs (optional, for topping)

Instructions
 

  • Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with cooking spray.
  • In a skillet over medium heat, sauté the finely chopped onion and minced garlic until softened, about 3-4 minutes.
  • In a large mixing bowl, combine the cooked brown rice, shredded chicken, sautéed onion and garlic, chopped broccoli, Greek yogurt, chicken broth, shredded cheddar cheese, and all seasonings: salt, pepper, garlic powder, onion powder, smoked paprika, and red pepper flakes if using.
  • Stir the mixture until everything is evenly combined and creamy.
  • Pour the mixture into the prepared baking dish and spread it out evenly.
  • If desired, sprinkle the whole wheat breadcrumbs evenly over the top for a crunchy topping.
  • Cover the casserole with foil and bake for 20 minutes.
  • Remove the foil and bake uncovered for an additional 10 minutes until the top is golden and bubbly.
  • Let the casserole rest for 5 minutes before serving to let the flavors meld.
