Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 14.5 oz diced tomatoes, drained
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper
  • 3 cups fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • for garnish fresh basil (optional)

Instructions
 

  • Season the chicken breasts with garlic powder, Italian seasoning, salt, and pepper.
  • Heat olive oil in a skillet over medium-high heat and sear chicken breasts 2-3 minutes per side until golden brown (optional for extra flavor).
  • Transfer chicken breasts to the slow cooker.
  • Add diced tomatoes, sun-dried tomatoes, chicken broth, and heavy cream. Stir gently to combine.
  • Cover and cook on low for 4-6 hours, or until chicken is cooked through and tender.
  • Shred chicken with two forks directly in the slow cooker.
  • Stir in orzo pasta and chopped spinach.
  • Cover and cook on high for 20-30 minutes, or until orzo is tender.
  • Add grated Parmesan cheese and stir well to combine.
  • Serve garnished with fresh basil if desired.
