Ingredients
  

  • 1 1/2 lbs boneless skinless chicken thighs or breasts
  • 1/2 cup honey
  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger (optional)
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • to taste salt and pepper
  • for garnish green onions, sliced
  • optional sesame seeds

Instructions
 

  • In a mixing bowl, whisk together honey, soy sauce, minced garlic, grated ginger, rice vinegar, and sesame oil until well combined.
  • Pat the chicken dry and season with salt and pepper on both sides.
  • Place the chicken in the slow cooker and pour the honey garlic sauce over it, coating all pieces.
  • Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is cooked through and tender.
  • If you want a thicker sauce, remove the chicken and set aside. Mix cornstarch and cold water to make a slurry, then stir it into the slow cooker sauce.
  • Cook on high for another 15-30 minutes until the sauce thickens.
  • Return the chicken to the slow cooker, spoon sauce over it, and let it soak for a few minutes.
  • Serve over rice or noodles, garnished with sliced green onions and sesame seeds if desired.
