1 1/2lbsboneless skinless chicken thighs or breasts
1/2cuphoney
1/4cuplow-sodium soy sauce
4clovesgarlic, minced
1tablespoongrated ginger (optional)
2tablespoonsrice vinegar
1tablespoonsesame oil
2tablespoonscornstarch
2tablespoonscold water
to tastesalt and pepper

Instructions
In a mixing bowl, whisk together honey, soy sauce, minced garlic, grated ginger, rice vinegar, and sesame oil until well combined.
Pat the chicken dry and season with salt and pepper on both sides.
Place the chicken in the slow cooker and pour the honey garlic sauce over it, coating all pieces.
Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is cooked through and tender.
If you want a thicker sauce, remove the chicken and set aside. Mix cornstarch and cold water to make a slurry, then stir it into the slow cooker sauce.
Cook on high for another 15-30 minutes until the sauce thickens.
Return the chicken to the slow cooker, spoon sauce over it, and let it soak for a few minutes.
Serve over rice or noodles, garnished with sliced green onions and sesame seeds if desired.
