Preheat the smoker to 250°F and use hickory, apple, or cherry wood for balanced smoky flavor.
Remove the membrane from the back of the ribs for better texture. Cut the ribs into individual pieces or 3-4 rib sections for party-size servings.
Coat the ribs with yellow mustard as a binder, then generously apply BBQ dry rub on both sides.
Place ribs on the smoker and smoke for 2.5 to 3 hours. Every hour, spritz with a mixture of apple juice and water to keep the ribs moist.
For the glaze, combine BBQ sauce, honey, butter, and hot sauce in a saucepan. Warm over low heat.
During the last 30 minutes of smoking, brush the glaze over the ribs and allow it to caramelize.
