Instructions
Preheat your smoker or grill to 225°F (107°C). If you don’t have a smoker, you can use smoked paprika or liquid smoke for flavor.
Place the raw eggs directly on the smoker grates and smoke for 30-45 minutes until they develop a subtle smoky aroma. Remove and let cool completely.
Once cooled, peel the eggs under cold running water and chop them into bite-sized pieces.
In a mixing bowl, whisk together the mayonnaise, apple cider vinegar, salt, black pepper, smoked paprika, mustard powder, garlic powder, and onion powder until smooth.
Gently fold the chopped eggs into the dressing mixture. Be careful not to overmix to maintain a chunky texture.
Stir in fresh chives or green onions if desired for added freshness and color.
