Ingredients
  

  • 12 large eggs
  • 2 cups mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 tablespoons fresh chives or green onions, chopped (optional)

Instructions
 

  • Preheat your smoker or grill to 225°F (107°C). If you don’t have a smoker, you can use smoked paprika or liquid smoke for flavor.
  • Place the raw eggs directly on the smoker grates and smoke for 30-45 minutes until they develop a subtle smoky aroma. Remove and let cool completely.
  • Once cooled, peel the eggs under cold running water and chop them into bite-sized pieces.
  • In a mixing bowl, whisk together the mayonnaise, apple cider vinegar, salt, black pepper, smoked paprika, mustard powder, garlic powder, and onion powder until smooth.
  • Gently fold the chopped eggs into the dressing mixture. Be careful not to overmix to maintain a chunky texture.
  • Stir in fresh chives or green onions if desired for added freshness and color.
  • Chill the egg salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
  • Serve cold or at room temperature as a dip, in lettuce wraps, or alongside keto-friendly crackers. Enjoy!
