Ingredients

  • 4 slices bacon
  • 3.67 cups chicken broth
  • 1/2 teaspoon kosher salt
  • 1 cup uncooked quick-cooking grits
  • 2 large tomatoes, scored, peeled, and chopped
  • 4 oz can green chiles, chopped
  • 1 cup shredded cheddar cheese
  • 4 oz goat cheese

Instructions

  • Cook the bacon in a large heavy saucepan or cast iron skillet over medium-low heat until crispy.
  • Remove the bacon from the pan and drain on paper towels, leaving 1-2 tablespoons of bacon drippings in the pan.
  • Add the chicken broth and salt to the pan, bringing it to a boil.
  • Stir in the grits, chopped tomatoes, and green chiles, then bring the mixture back to a boil, stirring continuously to prevent lumps.
  • Once it’s boiling, reduce the heat to low and simmer for 15-20 minutes, stirring frequently to prevent the grits from sticking.
  • Once the grits are creamy and thickened, stir in the cheddar cheese and goat cheese until melted and smooth.
  • Top the grits with the crispy crumbled bacon and garnish with fresh parsley, if desired.
  • Serve immediately and enjoy the rich, creamy, and spicy grits!
