Cook the bacon in a large heavy saucepan or cast iron skillet over medium-low heat until crispy.
Remove the bacon from the pan and drain on paper towels, leaving 1-2 tablespoons of bacon drippings in the pan.
Add the chicken broth and salt to the pan, bringing it to a boil.
Stir in the grits, chopped tomatoes, and green chiles, then bring the mixture back to a boil, stirring continuously to prevent lumps.
Once it’s boiling, reduce the heat to low and simmer for 15-20 minutes, stirring frequently to prevent the grits from sticking.
Once the grits are creamy and thickened, stir in the cheddar cheese and goat cheese until melted and smooth.
Top the grits with the crispy crumbled bacon and garnish with fresh parsley, if desired.
