Spicy Pineapple Jalapeño Chutney

Ingredients
  

  • 2 cups fresh pineapple, finely chopped
  • 2 jalapeño peppers, seeded and finely diced
  • 1 red onion, finely diced
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • 1/2 tsp salt
  • 1/2 tsp ground cumin
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp olive oil

Instructions
 

  • Heat olive oil in a medium saucepan over medium heat.
  • Add diced red onion and sauté for 3-4 minutes until translucent.
  • Stir in jalapeños and grated ginger. Cook for another 2 minutes.
  • Add pineapple, apple cider vinegar, brown sugar, cumin, salt, and garlic. Mix well.
  • Bring to a gentle simmer and cook uncovered for 20-25 minutes, stirring occasionally, until the chutney thickens.
  • Add lime juice and red pepper flakes (if using). Simmer for another 5 minutes.
  • Remove from heat and let cool slightly before transferring to a clean jar or container.
  • Store in the refrigerator for up to 2 weeks or freeze for longer storage.
