Ingredients
  

  • 1 1/2 pounds strawberries, quartered
  • 4 cups cucumbers, chopped
  • 1 small red onion, chopped
  • 8 ounces feta cheese, cubed
  • 1/2 cup fresh mint, minced
  • 1/3 cup olive oil (for dressing)
  • 1/3 cup golden balsamic vinegar (for dressing)
  • 2 tablespoons lemon juice (for dressing)
  • 1/4 teaspoon pepper (for dressing)

Instructions
 

  • Wash and dry all the produce thoroughly. Quarter the strawberries, chop the cucumbers into bite-sized chunks, and finely dice the red onion.
  • Cube the feta cheese into small pieces and mince the fresh mint leaves.
  • In a small bowl, whisk together the olive oil, golden balsamic vinegar, lemon juice, and pepper to make the dressing. Taste and adjust seasoning if needed.
  • In a large mixing bowl, combine the quartered strawberries, chopped cucumbers, diced red onion, cubed feta cheese, and minced mint.
  • Pour the dressing over the salad and gently toss everything together to ensure even coating. Be careful not to overmix to keep the strawberries intact.
  • Transfer the salad to a serving platter or individual bowls. Garnish with additional mint leaves or a sprinkle of cracked black pepper if desired.
  • Serve immediately for the freshest flavors. Enjoy!

Notes

For added texture, consider sprinkling toasted almonds or walnuts on top before serving.
