Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons cream cheese, softened
  • 1 clove garlic, minced
  • 1/2 teaspoon dried Italian seasoning
  • to taste salt and black pepper
  • 1 tablespoon olive oil
  • as needed toothpicks

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a mixing bowl, combine spinach, mozzarella, Parmesan, cream cheese, garlic, Italian seasoning, salt, and pepper.
  • Cut a pocket into each chicken breast without slicing all the way through.
  • Stuff each chicken breast with the spinach and cheese mixture and secure with toothpicks.
  • Season the outside of the chicken breasts with salt and pepper.
  • Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown.
  • Transfer skillet to the oven and bake for 15-20 minutes until chicken is cooked through (internal temperature 165°F).
  • Remove toothpicks and let rest for a few minutes before serving.
