Ingredients
  

  • 8 slices thick-sliced brioche, challah, or Texas toast
  • 4 large eggs
  • 1 cup milk or half-and-half
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter (for frying)
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • optional fresh berries, sliced bananas, chocolate chips, or jam (for filling)
  • optional maple syrup, powdered sugar, fresh fruit, whipped cream, nut butter, or fruit preserves (for toppings)

Instructions
 

  • In a mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy. If desired, fold in fresh berries, chocolate chips, or other mix-ins.
  • Spread the cream cheese mixture evenly onto one slice of bread and top with another slice to form a sandwich. Repeat with the remaining bread slices.
  • In a shallow dish, whisk together eggs, milk, vanilla extract, and ground cinnamon until well combined.
  • Dip each stuffed sandwich into the egg mixture, ensuring both sides are fully coated. Be careful not to soak too long to avoid soggy bread.
  • Heat a skillet or griddle over medium heat and melt a small amount of butter to prevent sticking.
  • Place the dipped sandwiches onto the skillet and cook for 3–4 minutes per side, flipping carefully, until golden brown and cooked through.
  • Serve warm with your favorite toppings, such as maple syrup, powdered sugar, fresh fruit, whipped cream, or nut butter.
