Ingredients
  

  • 1 pound ground sausage turkey or chicken sausage can be used
  • 1 package frozen tater tots about 32 ounces
  • 6 large eggs beaten
  • 1 cup milk whole or 2%
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper freshly ground
  • 2 cups shredded cheddar cheese or cheese blend
  • 1 cup diced bell peppers optional for added flavor
  • 1/2 cup diced onions optional

Instructions
 

  • Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • In a large skillet over medium heat, cook the ground sausage until browned. Drain excess fat and set aside.
  • In a mixing bowl, whisk together eggs, milk, salt, and black pepper until fully combined.
  • Spread the frozen tater tots evenly in the prepared baking dish. Layer the cooked sausage over the tater tots, followed by bell peppers and onions if using.
  • Pour the egg mixture evenly over the casserole. Sprinkle shredded cheddar cheese on top.
  • Bake in the preheated oven for 35-40 minutes, or until the eggs are set and the cheese is melted and bubbly.
  • Let the casserole cool for 5 minutes before serving. Garnish with fresh herbs if desired.
