Ingredients
  

  • 1 pound ground sausage (turkey or chicken works too)
  • 32 ounces frozen tater tots
  • 8 large eggs
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • optional diced bell peppers, onions, or spinach
  • optional paprika, garlic powder, or chili flakes

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  • In a large skillet over medium heat, cook the ground sausage until fully browned and crumbled. Drain any excess fat and set aside to cool slightly.
  • In a mixing bowl, whisk together the eggs, milk, salt, and pepper until smooth. Add optional spices like paprika or garlic powder if desired.
  • Spread a layer of frozen tater tots evenly across the bottom of the greased baking dish. Sprinkle the cooked sausage over the tater tots, followed by any optional vegetables you’re adding.
  • Pour the egg mixture evenly over the sausage and tater tots. Top with shredded cheese.
  • Bake in the preheated oven for 35-40 minutes, or until the eggs are set, the cheese is melted and bubbly, and the tater tots are golden brown and crispy.
  • Let the casserole rest for 5-10 minutes before slicing. Garnish with fresh herbs like parsley or chives if desired, and serve with optional toppings such as sour cream, salsa, or avocado slices.

Notes

For a make-ahead option, assemble the casserole the night before, cover it tightly, and refrigerate. When ready to bake, add 5-10 extra minutes to the cooking time. Freeze individual portions for up to 2-3 months for longer storage.
