Ingredients
  

  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup diced red bell pepper
  • 1/4 cup chopped black olives (optional)
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • 5-6 large flour tortillas (8-inch size)

Instructions
 

  • In a medium mixing bowl, combine softened cream cheese and sour cream. Mix until smooth.
  • Add shredded cheddar cheese, chopped green onions, diced red bell pepper, optional chopped black olives, garlic powder, salt, and pepper. Stir until well combined.
  • Lay one flour tortilla flat on a clean surface. Spread about ⅓ to ½ cup of the filling evenly over the entire surface of the tortilla, leaving a small border around the edges.
  • Roll the tortilla tightly from one end to the other into a log shape. Repeat with the remaining tortillas and filling.
  • Wrap each rolled tortilla securely in plastic wrap and place seam-side down in the refrigerator. Chill for at least 2 hours to firm up the filling and make slicing easier.
  • Once chilled, remove the rollups from the fridge and unwrap them. Using a sharp serrated knife, slice each log into ½-inch pieces. Wipe the blade between cuts for neat slices.
  • Arrange the pinwheels on a serving platter and serve chilled or at room temperature. Optionally, garnish with fresh herbs or serve with dips like salsa, guacamole, or ranch dressing.
