These bite-sized pinwheels are filled with a creamy, flavorful mixture of cream cheese, cheddar, green onions, and diced bell peppers. Perfect for parties, potlucks, or snacks!
In a medium mixing bowl, combine softened cream cheese and sour cream. Mix until smooth.
Add shredded cheddar cheese, chopped green onions, diced red bell pepper, optional chopped black olives, garlic powder, salt, and pepper. Stir until well combined.
Lay one flour tortilla flat on a clean surface. Spread about ⅓ to ½ cup of the filling evenly over the entire surface of the tortilla, leaving a small border around the edges.
Roll the tortilla tightly from one end to the other into a log shape. Repeat with the remaining tortillas and filling.
Wrap each rolled tortilla securely in plastic wrap and place seam-side down in the refrigerator. Chill for at least 2 hours to firm up the filling and make slicing easier.
Once chilled, remove the rollups from the fridge and unwrap them. Using a sharp serrated knife, slice each log into ½-inch pieces. Wipe the blade between cuts for neat slices.
