Preheat your grill to medium-high heat, about 400°F (200°C).
In a large mixing bowl, gently combine the ground beef with salt, black pepper, garlic powder, smoked paprika, and 1/4 cup of barbecue sauce. Mix lightly to combine.
Divide the beef mixture into 4 equal portions and shape each into a patty about 3/4 inch thick. Press a shallow indentation into the center of each patty to prevent puffing during cooking.
Place the patties on the hot grill and cook for about 4-5 minutes per side, or until they reach your preferred doneness. Use a meat thermometer to check for 160°F (71°C) if desired.
During the last 1-2 minutes of cooking, brush the remaining barbecue sauce over each patty and place a slice of cheddar cheese on top. Close the grill lid to allow the cheese to melt.
While the patties finish, toast the burger buns cut-side down on the grill for 30-60 seconds until lightly browned and crisp.
Assemble the burgers by layering lettuce, tomato slices, the grilled patty with melted cheese, red onion slices, pickles, and your choice of mayonnaise and mustard on the toasted buns.
Serve immediately with extra BBQ sauce and your favorite sides such as coleslaw, potato wedges, or grilled corn.
