Ingredients
  

  • 3 Scotch bonnet peppers, stems removed
  • 4 cloves garlic, minced
  • 4 green onions, chopped
  • 1 small yellow onion, chopped
  • 2 tablespoons soy sauce
  • 2 tablespoons fresh lime juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon vegetable oil
  • 1 tablespoon brown sugar
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon thyme leaves (fresh or dried)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon paprika
  • 0.5 teaspoon red pepper flakes (optional)

Instructions
 

  • Add all ingredients to a blender or food processor.
  • Blend until the sauce is smooth and well combined. If too thick, add 1-2 tablespoons of water or extra lime juice to reach your desired consistency.
  • Taste the sauce and adjust seasoning as needed – add more sugar for sweetness, lime juice for tang, or peppers for extra heat.
  • Use immediately as a marinade or dipping sauce, or refrigerate in an airtight container for up to one week.
  • For best flavor, marinate meats or vegetables for at least 2 hours, preferably overnight.
