Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg until evenly combined.
In a separate bowl, whisk together the milk, eggs, and vanilla extract until smooth.
Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Fold in the diced apples using a spatula or wooden spoon.
Scoop about 1/4 cup of the dough onto the prepared baking sheet for each fritter. Use your fingers or a spoon to gently shape them into rounds, leaving space between each fritter.
Bake the fritters for 15–18 minutes, or until they are golden brown and a toothpick inserted into the center comes out clean. Rotate the baking sheet halfway through baking for even browning.
Allow the fritters to cool on the baking sheet for 5 minutes before transferring them to a wire rack. Optional: Dust with powdered sugar, drizzle with glaze, or roll in cinnamon sugar while warm.
Notes
To make these fritters gluten-free, substitute the all-purpose flour with a gluten-free flour blend and ensure your baking powder is gluten-free.
