Ingredients
  

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and diced (such as Granny Smith, Honeycrisp, or Fuji)

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg until evenly combined.
  • In a separate bowl, whisk together the milk, eggs, and vanilla extract until smooth.
  • Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Fold in the diced apples using a spatula or wooden spoon.
  • Scoop about 1/4 cup of the dough onto the prepared baking sheet for each fritter. Use your fingers or a spoon to gently shape them into rounds, leaving space between each fritter.
  • Bake the fritters for 15–18 minutes, or until they are golden brown and a toothpick inserted into the center comes out clean. Rotate the baking sheet halfway through baking for even browning.
  • Allow the fritters to cool on the baking sheet for 5 minutes before transferring them to a wire rack. Optional: Dust with powdered sugar, drizzle with glaze, or roll in cinnamon sugar while warm.

Notes

To make these fritters gluten-free, substitute the all-purpose flour with a gluten-free flour blend and ensure your baking powder is gluten-free.
