Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning or use salt, pepper, paprika, and garlic powder
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4-6 large flour tortillas
  • 2 tbsp butter or oil for crisping
  • optional sour cream for extra creaminess
  • salsa, guacamole, or ranch for dipping

Instructions
 

  • In a skillet over medium heat, cook the ground beef until browned. Drain any excess grease and mix in the taco seasoning (or your spice blend).
  • Lay the tortillas flat on a clean surface. Evenly distribute the shredded cheddar and Monterey Jack cheese on top of each tortilla.
  • Spoon a generous amount of the seasoned beef mixture onto each tortilla. Optionally, add a dollop of sour cream.
  • Roll each tortilla tightly, folding in the sides to ensure the filling stays inside.
  • In a skillet over medium heat, heat butter or oil. Place the roll-ups seam-side down and cook for 2-3 minutes per side until golden and crispy.
  • Remove from the skillet, slice in half, and serve with your favorite dipping sauces such as salsa, guacamole, or ranch.

Notes

You can also bake these roll-ups in the oven at 375°F (190°C) for about 15-18 minutes, flipping halfway through.
