Ingredients
  

  • 1 can refrigerated biscuit dough (6 oz)
  • 1 cup shrimp with green sauce (or cooked, peeled shrimp)
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup mayonnaise
  • 1 scallion minced
  • 1/2 teaspoon fresh dill or parsley

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Divide each biscuit in half to make two circles. Press each biscuit circle into a mini muffin pan that has been sprayed with non-stick cooking spray.
  • In a bowl, combine the shrimp, shredded cheese, mayonnaise, minced scallion, and dill or parsley. Mix well.
  • Spoon about 1 tablespoon of the shrimp mixture into each biscuit circle.
  • Bake for 20 minutes, or until the puffs are golden brown and bubbly.
  • Allow the puffs to cool for a few minutes before serving. Enjoy!
