Preheat the oven to 350°F (175°C).
Divide each biscuit in half to make two circles. Press each biscuit circle into a mini muffin pan that has been sprayed with non-stick cooking spray.
In a bowl, combine the shrimp, shredded cheese, mayonnaise, minced scallion, and dill or parsley. Mix well.
Spoon about 1 tablespoon of the shrimp mixture into each biscuit circle.
Bake for 20 minutes, or until the puffs are golden brown and bubbly.
